Choc-Oh-Bana Bread Recipe, Have Your Cake And Eat It Too!

This recipe is perfect for a lunch box or just a healthy snack … with just enough sweetness to satisfy a sweet tooth!
Choc-oh-bana bread is also free of gluten, dairy, added sugars and nuts. Of course you can have your cake and eat it, too!
Ingredients (Dry)
- 5 cups of gluten-free (or wholewheat) flour
- 1¼ tsp. baking powder
- ½ tsp. baking soda
- 1 tsp. cinnamon
- 1 tbsp. ground flaxseed
- ¼ cup dark chocolate nibs
- Pinch of sea salt
Ingredients (Wet)
- 3 ripe bananas (mashed)
- 1 egg
- ¼ cup unsweetened apple sauce
- ¼ cup coconut oil
- ¼ cup maple syrup
Instructions
1. Stir dry ingredients together in a large bowl.
2. Mix wet ingredients in a second large bowl.
3. Fold dry ingredients into wet ingredients.
4. Stir in ¼ cup dark chocolate nibs.
5. Put in a misted loaf pan, in preheated oven (350F) for 25 minutes.
Nutrition Notes
Sugar-free: sweetened with ripe bananas and maple syrup
No margarine or hydrogenated oils: replaced with coconut oil
Dairy-free: for moistness, unsweetened apple sauce and one egg is used.
