Get Your Protein Fix With These Quinoa Bites


An ideal snack for growing, sporty kids – these Quinoa Bites are so easy to make. Quinoa adds a nice texture, while providing an extra dose of protein.


For adults, these bites can be perfectly paired with quality espresso. Moreover, they freeze well and can be made using a variety of fruits that you and your family enjoy.

My favorite choice of options for the added items are: goji berries, grated apple with dark chocolate nibs, chopped apricots, raisins and unsweetened desiccated coconut.

Have fun experimenting until you find your favorite flavor and texture of Quinoa Bites!

Ingredients

  • 1 cup cooked quinoa (cooled)
  • 1 cup whole rolled oats
  • ½ tsp. spice of choice (e.g. cinnamon, five spice, nutmeg)
  • 2 tbsp. raw sugar (e.g. coconut palm, sucanat)
  • A pinch of salt
  • 1 cup chopped mixed fruit
  • 2 eggs

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl stir together quinoa, oats, sugar, salt, spice.
  3. Stir in dried fruit mixture.
  4. Lightly beat eggs and stir gently into mixture.
  5. Spoon mixture into greased/sprayed mini-muffin tin.
  6. Bake for 15-20 minutes.
