7 Simple And Healthy Food Recipes For Work From Home Professionals

1. Sesame Pork And Noodle Salad

Leftover pork dishes can be converted into a salad using ginger, sesame, soy sauce and rice vinegar dressing. Parboil some vermicelli and toss with some salad leaves and you will have a refreshing mid-day meal.

2. Couscous With Chopped Vegetables And Fresh Herbs

Couscous takes only five minutes to cook. Drain and toss in chopped avocado, walnut, kidney beans, chopped spinach, rockets and fresh herbs. This dish is high in fiber and packed with vitamins, minerals, and antioxidants.

3. Scrambled Eggs On Whole Meal Toast with Grilled Mushroom And Tomato

Brush the tomato and mushroom with olive oil and grill them in the toaster oven till soft. Cook scrambled eggs and top them on toasted whole meal bread. Olive oil is a good source of Omega-3.

4. Barbecue Chicken Sandwich

Toss leftover chicken in a dish with barbecue sauce and crunchy shredded carrots. Put them on whole wheat sandwich bun and top with romaine leaves.

5. Fruit Pasta Salad

Chop up pineapple and pear, add white balsamic vinegar and apple cider vinegar, toss with other cut fruits that are available in the fridge with pasta and a dash of cheddar cheese.

6. Homemade Vegetable Soup

Hearty soup made for dinner, and the leftovers can be the next day’s healthy lunch. Cook pea, watercress, tomato, carrot and coriander in vegetable stock. Add a tbsp. of garam masala and mixed spices to give it some zest and spice.

7. Spicy Chicken And Roasted Vegetables Tortilla

Lightly brush red pepper, mushroom and chicken breast with olive oil, paprika and chili powder. Put them into the toaster oven and roast till chicken is cooked. Wrap with tortilla and salad leaves.
