Black Thai Rice, A Satisfying Change From Oatmeal

Need a break from oatmeal? Black Thai rice is a welcome, satisfying change, and also makes a great dessert.
Serves 4
Ingredients
- 1 cup black Thai rice, soaked overnight
- 5 litres low fat unsweetened coconut milk
- 3 tbsp. coconut sugar, or raw sugar (e.g. sucanat)
- ¼ cup raisins (or dried fruit of choice)
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tbsp. orange rind
Directions
- Place all ingredients in a casserole dish, and cover.
- Bake at 300F for two hours, stirring after one hour.
To Serve
Top with Greek or natural yogurt and berries of choice. Keeps in the refrigerator for up to four days.
