Get Your Protein Fix With These Quinoa Bites

An ideal snack for growing, sporty kids – these Quinoa Bites are so easy to make. Quinoa adds a nice texture, while providing an extra dose of protein.
For adults, these bites can be perfectly paired with quality espresso. Moreover, they freeze well and can be made using a variety of fruits that you and your family enjoy.
My favorite choice of options for the added items are: goji berries, grated apple with dark chocolate nibs, chopped apricots, raisins and unsweetened desiccated coconut.

Ingredients
- 1 cup cooked quinoa (cooled)
- 1 cup whole rolled oats
- ½ tsp. spice of choice (e.g. cinnamon, five spice, nutmeg)
- 2 tbsp. raw sugar (e.g. coconut palm, sucanat)
- A pinch of salt
- 1 cup chopped mixed fruit
- 2 eggs
Instructions
- Preheat oven to 350 degrees.
- In a large bowl stir together quinoa, oats, sugar, salt, spice.
- Stir in dried fruit mixture.
- Lightly beat eggs and stir gently into mixture.
- Spoon mixture into greased/sprayed mini-muffin tin.
- Bake for 15-20 minutes.
