Make Your Own Healthy Crunchy Granola

Commercial granolas can be loaded with sugars and low-quality ingredients. It is so easy to make your own at home, where you can vary ingredients according to preferences and taste.
To cater for allergies in my household the recipe here is gluten-free. As my kids often like to take it to school for a snack, I omit the nuts and use more seeds and dried fruits.
Ingredients
- 2 cups gluten-free rolled oats
- 1 cup mixed chopped nuts (almonds, walnuts, brazils, pecans) and seeds (sunflower, pumpkin)
- ½ cup unsweetened desiccated coconut (or coconut flakes)
- 3 tbsp. coconut oil
- 3 tbsp. maple syrup
- ½ tsp. spice (cinnamon, nutmeg, all spice)
- ½ cup dried fruit (raisins, cranberries, apricots, prunes).
- Pre-heat oven to 350 degrees Fahrenheit
- Mix all ingredients, apart from the dried fruit, in a baking tray
- Bake for 30 minutes, stirring half way
- Add dried fruit, bake for another 10 minutes
- Store in airtight container for up to three weeks.
