Meatless Mondays: Delicious Vegetarian Crusted Firm Tofu Recipe

This is a great Meatless Monday (or any-day) vegetarian dish. The grilled coconut gives the tofu a great crunchy texture, as tofu is often soft and perhaps a little chewy.
Coconut oil is safe to cook with at a high heat as it contains saturated fats, and the orange juice adds a nice natural sweetener.
Ingredients
- Organic firm tofu
- 2 tbsp. coconut oil
- 2 tbsp. orange juice
- 2 tbsp desiccated coconut mixed with 2 tbsp ground flaxseeds
Instructions
1. Drain tofu, cut into triangles and dry off to get rid of liquid.
2. Gently press tofu under a small heavy pot or chopping board to get rid of excess moisture.
3. Marinade tofu in coconut oil and orange juice for 30 minutes.
4. Keep in the fridge, and turn a couple of times.
5. Roll the marinated tofu in desiccated coconut mixed with ground flaxseeds (or sesame seeds).
6. Grill for 20 minutes.
Serve with asian greens and other veggies which are at hand, with lots of fresh garlic, along with lime-infused buckwheat. Quinoa or another grain is also a great option.
Buy organic tofu so as to avoid any GMO variations of soy. This still makes for an inexpensive and nutritious dinner. The flaxseeds can be replaced with sesame seeds or cooled, cooked quinoa
