Oaty Almond Muffins


These healthy oaty almond muffins are great with your morning cuppa, and are so full of goodness they can be enjoyed even at breakfast time.


They can be made gluten-free by using gluten-free oats, and they contain no refined sugar, oils or margarine. The blueberries provide a nice juicy texture which is balanced by the crunchiness of the sliced almonds – a truly satisfying nutritious snack.

Flour-free (gluten-free if using gluten-free oats). No oil/margarine. No refined sugar.

Ingredients (Dry)

  • 2 cups old-fashioned oats (gluten-free, if desired)
  • ½ tsp. baking soda
  • ¼ tsp. cinnamon

Ingredients (Wet)

  • 1 ripe mashed banana
  • 1 egg
  • ¼ cup almond butter
  • ½ cup almond milk
  • ½ cup plain Greek yogurt
  • ¼ cup maple syrup
  • 1 cup fresh blueberries
  • ¼ cup raw sliced almonds

Instructions

  1. Stir dry ingredients together in a bowl.
  2. Mix wet ingredients in a second bowl.
  3. Fold wet ingredients into dry ingredients.
  4. Stir in ¾ cup fresh blueberries.
  5. Put in a misted muffin tin.
  6. Top each muffin with a few blueberries and some raw almonds.
  7. Cook in preheated oven (350F) for 20-25 minutes.
