Oaty Almond Muffins

These healthy oaty almond muffins are great with your morning cuppa, and are so full of goodness they can be enjoyed even at breakfast time.
- 2 cups old-fashioned oats (gluten-free, if desired)
- ½ tsp. baking soda
- ¼ tsp. cinnamon
Ingredients (Wet)
- 1 ripe mashed banana
- 1 egg
- ¼ cup almond butter
- ½ cup almond milk
- ½ cup plain Greek yogurt
- ¼ cup maple syrup
- 1 cup fresh blueberries
- ¼ cup raw sliced almonds
Instructions
- Stir dry ingredients together in a bowl.
- Mix wet ingredients in a second bowl.
- Fold wet ingredients into dry ingredients.
- Stir in ¾ cup fresh blueberries.
- Put in a misted muffin tin.
- Top each muffin with a few blueberries and some raw almonds.
- Cook in preheated oven (350F) for 20-25 minutes.
