Quick And Healthy Lunch: Wholesome Chicken Sandwich Recipe

This nutritious chicken sandwich (or do you prefer turkey?) is the favorite carry-on meal of mother-to-twins and Singapore Mumpreneur of the Year, Kareen Lai. You can make it the night before, keep it in the fridge and voila, a hearty snack or lunch ready for everyone the next day. Balanced with low GI carbohydrates, protein and vitamins, it’s a perfect companion for a busy day.
Preparation time: 15 minutes
Ready in: 15 minutes
Ingredients
- 1 whole chicken breast
- 4 heaping tbsp. of cottage cheese (vary quantity according to preference)
- Sliced tomatoes
- Brie cheese (sliced thin)
- Romaine lettuce leaves/butter head leaves
- Salt and pepper to taste
- Sliced wholemeal bread
Instructions
- Steam chicken breast until cooked
- Shred chicken breast into strips
- Put chicken breast, cottage cheese, salt & pepper in bowl and mix until even
- Lay lettuce & tomatoes on slice of bread.
- Add in a slice of brie cheese
- Add chicken breast combination
- Lay more lettuce to your liking
- Cover with another slice of bread.
- Voila! A fully packed sandwich is ready!
