The Raw Food Chef Who Begged Her Family For Raw Chocolate

It’s August 6th 2015, day 4 of my Matthew Kenney Raw Food Chef Training in Huahin. Wait a moment, I hear you think, “I thought you already were a raw food chef”. Well, I did Elaina Love’s training in Bali in 2013, and that certified me as a raw food chef and educator by Pure Joy Academy. This is my personal desire to upgrade my skills and knowledge and learn from what I consider the best raw food academy that I know of.

This is my personal desire to upgrade my skills and knowledge and learn from what I consider the best raw food academy that I know of.

There are 24 days left and I crave chocolate. I crave my own raw chocolate, of course, but next to that, I crave the salted raw chocolate by Big Tree Farm. I ordered some from my family on Day 1, but in all their busyness, it got left off their to-do list, which means that today, I’ve basically forced them to go and buy me some before they head off to come and spend the SG50 long weekend with me in Huahin.

It doesn’t make it any easier that I am planning a raw chocolate class for September. In my current condition, I have decided to call the class, “Chocolate Cravings Contented. Recipes for Everyday Desires.”




As with all my raw chocolate classes, I start off with a brief introduction to cacao, including word origins, geography, history of, what it is, and why it’s a superfood. I then move on to sweeteners and the many possibilities of chocolate. Then it’s hands-on time, as we together make chocolate singles and bars, learning about how to play with texture, flavor and colour. We make a chocolate sauce, singles, bars, truffles, bonbons, ganache, and drink. That’s seven satisfying ways of consuming chocolate to make sure you don’t need to beg your family for chocolate. But be careful, your family may start begging from you.

Kindly express your interest for a class on Thursday 10th September, 7pm to 9pm, $100 per person. Exact address in Bukit Timah is disclosed upon registration. Before anyone asks, no, you don’t have to beg for any chocolates in my classes. YES, of course you get to eat the chocolates!

P.S. At time of publishing this article, Pauliina got to satisfy all her chocolate cravings as in week 3 of training the focus was on raw chocolates and pastries. Mmm…
