Ingredients:
- 1-2 Chicken Breasts Per Person
- ½ TSPN Ground Ginger
- ½ TSPN Cajun Seasoning
- ¼ TSPN Chilli Powder Or Paprika
- 2 Cloves Diced Garlic
- ¼ TBSP Chilli Flakes
- A Fresh Lemon
- Splash Of Oil
- Pinch Of Salt & Pepper
Method:
1. Dice the chicken breasts into medium sized chunks and pop into a bowl along with ginger, cajun and paprika; rub with your hands to marinade.
2. Heat the splash of oil in a frying pan over moderate heat, and add in the chilli flakes and garlic cooking for one minute.
3. Next, add the chicken to the pan and leave to brown on this side for roughly 5 minutes.
4. Give the pan a good flip or stir to turn the chicken over, squeeze over some fresh lemon, and continue cooking for 10 minutes more or until the chicken is cooked through.
5. Serve with mashed sweet potato, rice, and veggies!
