Vita Squares, A Great Way To Get Kids To Eat Their Veggies

These tasty squares are a great way to get kids to eat extra veggies, and are perfect packing into school lunch boxes as they are nut-free.
The carrot and zucchini (courgette) provide a lovely moist texture, while providing substantial amounts of vitamin A (good for their night vision and skin), vitamin C (and anti-oxidant and helps with the absorption of iron – important for growing kids). The square contain a lot of fiber from not only the vegetables and fruits, but also the wholewheat flour and flax seeds. The later also provides healthy omega 3 fats, essential for all that brain power!
The added raw coconut sugar can be reduced further if desired, as there is plenty natural sweetness, and goodness, from the veggies, raisins and apple sauce.
Ingredients (Dry)
- 1.5 cups whole wheat flour
- 2 tbsp ground flax seed
- ¼ cup coconut palm sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp ground ginger
Ingredients (Wet)
- 2 beaten eggs
- 1.5 cups shredded carrots
- 1 cup shredded zucchini (courgette)
- ½ cup unsweetened apple sauce
- ¼ cup coconut oil
- ½ cup raisins
- ¼ cup maple syrup
- 1 tsp vanilla essence
Directions
1. Stir dry ingredients together in a large bowl
2. Mix wet ingredients together in a second bowl
3. Fold wet ingredients into dry ingredients
4.. Place batter in a misted (with coconut oil) baking tray, in a preheated oven (350F) and bake for 25 minutes
5. Let cool, and cut into squares or any shapes as desired
